This SOP helps to prevent or minimize contamination of food by employees.
This SOP is applied to all employees working in a food facility and deals with:- Handhygiene- Cleaning and sanitizing food contact surfaces
Procedure for Handwashing
Roll up your sleeves and expose your wrists.
Wet your hands and wrists under warm water and apply soap from a dispenser.
Rub your hands together. Scrub for at least 20 seconds. Make sure to scrub fingertips and wrists as well as in between your fingers.
Rinse hands and wrists under warm water.
Dry hands with a clean paper towel.
Turn off the water tap using the paper towel.
Discard the used paper towel in the dust bin.
Procedure for Cleaning and Sanitizing Food Contact Surfaces
Remove all food products and packaging from surfaces which you prepare food on before cleaning.
Remove food remains as well as any soil.
Wipe the food contact surface with hot water.
Prepare your cleaning solution.
Apply the cleaning solution, using a brush to remove any leftover soil from the surface.
Let the solution sit on the surface for 10 minutes.
Rinse the surface with water.
Check your equipment and all surfaces for food residues.
Sanitize all food contact surfaces with the chemical solution.
